FLORIDA BLACK GROUPER FILLET WITH EMERALD NOODLES

Ingredients:
• 7OZ Seared Grouper
• 1tbsp white wine
• 1tbsp Chu Chee curry paste
• 1tsp fish sauce
• 1 1/2tsp palm sugar
• 1/2cup Coconut milk
• 2tbsp olive oil for searing
• 2oz fine sliced red pepper
• For stir fried noodles
• 1oz Grilled portabella mushroom (cut in to 2picecs)
• 1oz sliced green onion
• 4oz spinach noodles
• 3oz bean sprouts
• 2shakes ground white pepper
• 2chopped garlic
• 1/2tsp oyster sauce
• 1/2tsp golden mountain soy sauce
• 1tbsp olive oil




   
 

Method of perpetration for noodle:
• Boil water in pot. Add noodle and stir occasionally about 5 minutes, drain, rinse in cool water and set aside

• To stir fry noodles, Heat wok or sauce pan in medium high heat. Add vegetable oil, garlic , noodles, bean sprout ,portabella mushroom, pepper, red bell pepper soy sauce oyster sauce and green onion Cook and stir a few times

• Arrange on serving plate. Set aside

Method for sauce
• Heat sauce pan on medium heat. Add vegetable oil, Chu Chee curry paste, keep stirring until fragrant. Add coconut milk, fish sauce and sugar, set temperature to low heat

Seared Grouper
• Heat sauté pan on medium heat high Add Olive oil After moment add grouper fry until golden brown turn over and finish of in the oven at 350’ about 3minutes

• Arrange on top of the noodle then top with Chu Chee sauce , Garnish with fine slice red pepper Serving for 1 Paring with Jordan, Russian River Chardonnay
